Apple-cinnamon power bars
- 2 cups of pecans
- 2 cups of rolled oats
- 1 1/2 cups pitted and halved dates
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups chopped Granny Smith apples
- 1/2 cup Tony Sfeir’s Slim Whey Ladies natural protein powder
Preheat oven to 180°C.
Spread the pecans and oats out in a single layer on a piece of baking paper and bake in the oven for 10-15 minutes, until toasted.
Keep the oven preheated at the same temperature.
Line an 8″ square pan with baking paper, leaving enough paper on the sides to use as “handles” to remove from the oven once done.
Place the baked nut and rolled oats mixture in a food processor along with the protein powder, dates, cinnamon, and salt. Process until the mixture is crumbly, almost like breadcrumbs, with no large pieces still remaining.
Add the chopped Granny Smith apples in and process again until there are no longer any large apple chunks. Continue to process until everything begins to join together in a clump.
Transfer the mixture to the prepared baking pan and use a spatula or the back of a spoon to press the mixture down firmly and flatly.
Bake the finished product in the hot oven for 20 minutes. Cool for 10-15 minutes, and then slice into bars using a sharp knife. Don’t lift them out of the pan until they are completely cooled and set.
Store in the fridge for easy access – these can be wrapped in cling film and taken with you for when you are on the go and in serious need of an energy fix.
